"Scout feels like the setting for a lumberjack-themed Project Runway challenge - there’s a lot of tartan fabric everywhere - but it somehow still feels chic. It’s the hotel bar for Thompson Seattle, but you’ll enjoy a trip there even if you’re not staying in the hotel.
