"Carnitas Rico operates out of a gas station near the South Terminal of the airport, which means the only way you’re ending up here by mistake is if you’re picking up snacks for the flight. Or maybe you're drawn in by the savory carnitas smell wafting through the parking lot. This place shares a kitchen with a BBQ and burger spot, and while you can get some tasty smoked wings inside, don’t get distracted—carnitas are why you’re here. Even if you have no plans to board a budget flight to Palm Beach, Carnitas Rico is worth a visit. You can order by the taco or by the pound, then watch as a massive, jiggly slab of pork—filled with golden bits of belly, fat, and skin—gets thrown onto a giant cutting board and minced into a beautiful meat mosaic.
