The slices of tender beef that stay a little pink in the center and snappy green onions and cilantro are really just welcome additions. Expect those steaming bowls of soup, arranged on trays five at a time, to make their way from the kitchen by servers with such steady hands that they wouldn’t spill a drop of cinnamon-y broth even in an earthquake.
