Michelin Guide 2020: Scotland Celebrates Two New Stars!

Revitalised by new owners and Head Chef Graeme Cheevers—who arrived in late 2018 after eight years as executive chef at Michelin-starred Martin Wishart at Cameron House on Loch Lomond—the kitchen celebrates Scotland’s larder, from Isle of Mull scallops to Black Angus beef and Ayrshire lamb, and a celebrated cheese trolley rich in local selections. Natural flavours are paramount, brought together in well-balanced, harmonious combinations across highly seasonal yet understated dishes. Dishes enjoyed by the Michelin Inspectors over the past year included Loch Fyne crab with Granny Smith apple, smoked haddock jelly and seaweed butter; saddle of Argyll roe deer with baked celeriac, spelt and green pepper sauce; and vanilla millefeuille with blackcurrant and Knockraich crème fraîche sorbet; from the canapés through to the petit fours, the quality of the cooking shines.
