In an inviting and convivial rustic-style decor, he focuses on quality ingredients from the terroir, which he cooks simply: cep and aubergine marmalade, to be spread on toast; roast pork, straw potatoes and a good béarnaise sauce with plenty of vinegar; rhubarb meringue. His goal is to make the most of the treasure trove of seasonal produce the region has to offer in spring and summer.
