"At Rang Mahal, chef Milind Sovani presents traditional Indian flavours in a new light with his five-course dinner menu priced at $118++. Sovani’s creations are colourful and creative, but still uphold the integrity of the quality produce he uses and traditional North Indian flavours. For example, the Masala Rice Sushi looks like a Japanese maki but is made with Ambemohar, a sticky rice from Maharashtra in western India prized for its mango blossom scent, cooked with Madras curry powder and rolled with crispy vegetables.
