"This restaurant was founded in 1954, in what used to be a bar. In a classic Showa-era touch, the space reverberates with the unmistakable noise of the railway viaduct above. The popular ‘Modern-yaki’ offered here is stir-fried noodles with pork and squid, which is mixed with egg, forming the body of the savoury pancake. The ‘Sujitama’ is in Osaka style, where generous amounts of beef tendon and green spring onion are mixed into the base mixture, with oba added for some subtle flavour." - Michelin Inspector
