"Set in a remote spot amid the spectacular landscape of The Burren, this is Ireland’s first Michelin-Starred pub, and after dinner and an overnight stay I understood why. Since winning the Star, reservations have surged—from locals and British visitors to guests from the USA and Australia—yet chef-owner Aidan McGrath keeps standards high by offering just two set-priced menus, reducing the number of diners, and stripping back plates so the superb main ingredient can shine. The approach is to source the best produce—almost exclusively Irish—and cook simply to highlight natural flavor. A signature dish of black pudding and foie gras with griddled apple, apple puree, celery and olive oil balances luxurious richness with the acidity of the apple.
