"Opened in 2022 and newly awarded Two Michelin Keys, this Palladian former archbishops’ residence in Cashel has turned Tipperary into a place to stay, not just pass through. We love that it’s a 10‑minute stroll from the Rock of Cashel, while on property you get a spa, a swimming pool, and rooms split between the main house and two wings, dressed in a blend of charming period touches and modern sensibilities. Set just off Cashel’s main street, it puts coffee shops, antiques stores, and boutiques on the doorstep, and it also unlocks cycling, hiking, kayaking, and other active pursuits in the pristine local landscapes. The owners also run Coolmore Stud, and uniquely the hotel offers an Equine Concierge that can arrange hands‑on racing, jumping, or breeding experiences, including guided trips to typically closed‑to‑the‑public Coolmore. History runs through the place: the estate’s old well was once used by Richard Guinness to brew ale for the archbishop (his son Arthur would take £100 from the archbishop’s will to start his draught in Dublin), and the gardens now grow hops in homage, in the fertile Golden Vale famed for dairy. Dining is a highlight, from the One‑Star Bishops Buttery under a vaulted ceiling with sumptuous, colourful furnishings, to the Queen Anne room for lunch and afternoon tea, the informal Mikey Ryan’s next door, and Sadler’s Restaurant about 20 minutes away using locally sourced ingredients.
