Reopened in 2009 by owners Danja and Zdravko Rus, it looks to the past as much as the present: chef Aleš Fende draws inspiration from a trove of preserved house recipes (especially in winter), while Food & Beverage Manager Danijel Galjot—an astute sommelier and mixologist with a particular eye for gin pairings and the author of a book on the subject—guides the experience. The modern, varied menu stays honest in flavour with home-made pasta, ravioli, soups and pâtés, and showcases specialities such as smoked trout aspic, smoked tongue, and the 1906 soup of dried porcini, chanterelles, Kranjska sausage and buckwheat. Tasting menus run from three to eight courses, balancing light, fresh plates like hazelnut soup with chestnuts and truffles and nettle parfait with lardo and egg yolk with broader, cross‑influenced recipes, exemplified by a Mediterranean‑tinged amberjack fillet with home‑made ravioli and mandarin whose citrus notes add real character.
