Having earned his spurs at Nerua Guggenheim Bilbao, Mugaritz, Noor, and Bagá, he now declares: 'Radis is all about time-honoured recipes and home cooking, the type of dishes my mother would cook. And as I’ve always said, and will continue to do so, there will never be a shortage of croquettes on the menu at Radis!'
