"A family-run Hakka noodle spot with decades of local patronage, it serves thin, springy in-house noodles coated in lard and secret sauces, topped with braised pork mince, char siew and chye sim. The noodles avoid the unpleasant alkaline taste often found elsewhere because they’re made on-site; the pork is hand-chopped and braised with soy sauce, fish sauce and garlic for a deep, savoury complexity.
