"Now open in Oak Cliff at 829 W Davis Street, I found Neony Pizza Works turning out pies made with a 72-hour cold-fermented dough that Alex Ham says gives more complex flavor and easier digestion. The hotly anticipated pizzeria softly opened last week and celebrated its grand opening yesterday, and so far it has been selling out — “We didn’t expect that,” Ham says. Ham, a commercial photographer who previously ran a New York–style pizzeria in Seoul with his wife Eun Young, offers classics like veggie, margherita, and sausage-and-mushroom alongside highly creative pies: a jalapeño pepperoni, a pesto-cream pizza with sausage, spinach, zucchini, and mushroom, a “cup and char” pepperoni pie finished with whipped mascarpone (which Ham describes as almost like whipped cream but less whipped and less sweet, creating a salty-and-sweet combo), and a popular banh mi pizza topped with house cilantro aioli, lemongrass sausage, cilantro, pickled carrot, and a sprinkling of mozzarella to meld the flavors.
