"I learned that Silverlake Ramen confirmed ambitious franchise plans two years ago and has since expanded to Santa Monica’s Third Street Promenade, a busy corner at Sixth and Spring in Downtown, and into Northern California; now the chain is set to open at the Long Beach Exchange with a planned arrival on Monday, September 30. The soft-opening is happening today from 5 p.m. to 10 p.m. with similar hours through the weekend, and regular hours at this LBX outpost will be 11 a.m. to 10 p.m. The company website also notes future locations for Koreatown, Huntington Beach, Irvine, Cerritos, Oxnard, and Concord, North Carolina, and the LBX shop is part of owner Jitaek Lim’s franchise phase where independent owner/operators will participate — its arrival also coincides with Long Beach’s ongoing ramen boom." - Mona Holmes
