"Expanding its fleet of Houston outposts, Gringo’s Mexican Kitchen — which originated in Pearland — will open in Katy in 2020 next to Harris County BBQ in the Costco development, according to a Facebook post (the company also shared images of the future location). The local Tex‑Mex favorite is known for menu items like seafood enchiladas, fajita bowls, and many margarita options.
