"In the Eldeco Centre in New Delhi, I encountered a San Francisco–themed restaurant called the Mission Bay that invites diners to "taste the spirit of San Francisco." Owned by Puja Sahu (who founded the Potbelly Bihari Kitchen) and inspired by her trips through San Francisco, Napa, Sonoma, and Healdsburg, the venture recruited Bay Area locals — chef Adam Timney (Starbelly) and sous chef Dustin Vorkoeper — with West Bev consulting on cocktails. The menu blends Mexican, Italian, Mediterranean, Japanese, and Korean influences and features fried chicken karaage paired with gochujang aioli and lemon; hamachi crudo with leche de tigre, avocado, chile, and puffed quinoa; Baja-style shrimp tacos; a lavender-brined pork chop with roasted butternut squash purée and miso-glazed carrots and roasted mushrooms; and a grilled lamb burger, while cocktails pay homage to Bay Area restaurants by name. The interior, with plush blue booths, terrazzo tables, and plenty of plants, would also look at home in the Bay Area." - Dianne de Guzman
