The treats are hand-scooped, pressed and baked in a tiny kitchen by owners Nick and Liisa Frei, who rely on experience-based tweaks (when to add flour, how to adjust for humidity) and fresh ingredients rather than shortcuts; during big weeks they can produce tens of thousands of cookies and wholesale to many other vendors.
