"Lacuna is a new healthy fast-food concept preparing to serve 'made from scratch and fresh-to-order' dishes in Henderson. The menu, created by Catherine Baquirin and Brett Boyer, features 'antibiotic and hormone free' ingredients, 'no hidden' extras, and a 'protein forward' wraps and bowls menu with 'fresh greens and ancient grains flat bread.' Previewed dishes include 'Keep Calm and Vegan On,' with roasted sesame tofu, braised black beans, mild quinoa, shredded carrot, and raw pecans on patch-picked cabbage, and 'Machu Picchu' with spiced quinoa, sweet cranberries, avocado, cucumber, and toasted garlic chickpeas on whole leaf spinach." - Bradley Martin
