"I've watched the Mission District spot Tacos El Patrón become one of San Francisco’s most popular taquerias largely on the strength of a single taco — its quesabirria — after introducing the city to one of the first and best versions of those cheesy beef birria tacos. The Tijuana-style birria tacos now make up about 60 percent of the shop's sales, forcing owner Alberto Pineda to install an extra griddle to keep up. Despite that fame, Pineda still considers himself a “taco lover” first: his personal favorite is the namesake Taco Patrón, loaded with cheesy grilled shrimp.
