"At Sea-Tac, the new Capitol Hill Food Hall is a 7,700-square-foot hub between Gates A5 and A6 that houses eight vendors, but it reads more like an odd homage than a true replication of the neighborhood: only two of the vendors actually have outposts on Capitol Hill and some local critics have pointed out the mismatch since the project was first announced in 2018. A Sea-Tac representative framed the concept as 'paying homage to the neighborhood, versus replicating it exactly,' and while any new food is welcome at an airport that long lacked great dining options, I'm left hoping more genuinely local businesses will show up; on the plus side, the hall will include one of two permanent performance spaces for local musicians as part of Sea-Tac’s expanded live music offerings." - Gabe Guarente
