"Operating since 2008, Griddlecakes has long been one of the region’s most popular breakfast-and-lunch destinations, and I’ve seen it debut its fourth local restaurant in Spring Valley in a 2,299-square-foot space at the intersection of Rainbow Boulevard and Flamingo Road. Famed for elaborate pancake dishes and frequent long lines of diners patiently waiting for weekend brunch, it replaced a former Einstein Bros. Bagels coffee shop and shares the building with a drive-thru Dairy Queen. In addition to flavored pancake stacks that can be personally customized and upgraded with choices of fruit, cream, and drizzle, the lengthy breakfast menu—served all day—includes omelets, waffles, French toast, skillets, eggs Benedict, and scrambles, while lunch features sandwiches, wraps, salads, and eight-ounce burgers. The new space sits about five miles northeast of the Fort Apache Road outpost, and the company continues to operate locations in North Las Vegas and on Eastern Avenue.
