"Tops Diner is known for its disco fries, a classic diner dish made up of a mountain of crispy fries topped with melted mozzarella cheese and smothered in a creamy gravy sauce. It has been one of the state’s most popular diners since opening in 1942. A complete rebuild of the diner took place in 2020, and now it offers both classic diner fare and upscale dishes. The diner’s chefs make the dish’s overnight homemade gravy with stock made from veal marrow bones and fresh vegetables and herbs, which simmers for 18 hours.
