New Raleigh Project Little Blue Bakehouse Wants to Launch Bakeries | Eater Carolinas

"A 3,200-square-foot bakery incubator and storefront planned for a refitted strip-mall space at 2116-H New Bern Avenue, with the front third dedicated to a coffee shop and display kitchens so member bakers can sell directly to the public through a large window into the production area. Designed as a community hub east of downtown near local institutions and a movie theater, it will house up to five baking-focused vendors on a rotating basis (with a priority for noncompeting products), has two tenants already signed on, and is seeking one vendor who makes breads or breakfast pastries. The venture aims to lower the barriers to opening a standalone shop by sharing space and equipment, expects turnover after a year or two so members can graduate to their own storefronts, and is fundraising to cover construction and unexpected equipment costs." - Eric Ginsburg
