"I found the evolving, entertainment-centric Wharf complex has been willing to give chef Jan Van Haute latitude to finish Florentijn, but ownership is also pushing a plan B: marketing the corner lot on Pearl Street to other hospitality professionals who could complete alternate ventures. Management has tried to bridge Van Haute's funding gap, says broker John Asadoorian, but "it can’t wait forever," and finding another tenant could take time—particularly if a new operator decides it would need to demolish everything Van Haute has been piecing together since last fall." - Warren Rojas
