"Founded in 2017 by Nick Hill and Holly Coleman as a passion project after coming across an antique cider press at Renton’s Antique 4U, this small-batch, award-winning operation sources fruit from its Ellensburg orchard and pours from a taproom tucked into the back of an antique store furnished with stained glass windows and card catalog cabinets. Dedicated to reviving centuries-old cider-making techniques, they use heirloom apples like Kingston Blacks and Harrisons and adjunct fruits such as blackberries, strawberries, rhubarb, and pears; the lightly carbonated ciders skew drier and more refined in the tradition of French and English styles and have earned more than 80 awards.
