"Set to debut in 2027 inside Fredericksburg’s forthcoming Waldorf Astoria Hill Country Resort, this Dominique Crenn–run spot is planned as a detour from her usual vegetarian and pescatarian focus, with an emphasis on game—perhaps a quail terrine—and tasting menus, though at least at its inception it will opt for à la carte dishes to be, as she puts it, “very inclusive to anyone who will walk in the door.” The menu aims to draw from Fredericksburg’s agriculture and source local ingredients, and while it will not lean on the town’s deep German ties, Crenn notes similarities with cuisine from her native northern France and says her German grandmother’s cooking informs and inspires her approach." - H.
