"At the edge of the coastline in Vila do Bispo, this white stucco, wood‑fired pizza shop on Rua Comandante Matoso sends an aroma of roasted vegetables out its front door over the heads of a small line of pizza pilgrims. Operating an almost entirely vegetarian kitchen in a place where cod is practically a religion, it leans on local produce for an Italy‑meets‑Portugal menu and pours low‑intervention wines from across the country for an eclectic crowd of surfers, pensioners, and Fishermen’s Trail hikers. Co‑owner Rosalba Belussi, who comes from Italy, insists the pizza stay Italian while using Portuguese flour and whatever seasonal ingredients local farmers bring to the door, resulting in pies that might feature pumpkin with a cream base, goat cheese, sun-dried tomatoes, sage, and oregano; a simple buffalo mozzarella pizza with cherry tomatoes, basil pesto, and pecorino; or the Bishop in the Garden, topped with garlic and ginger mayonnaise, mozzarella, seasonal vegetables, and oregano — all ideal with a pint of local draft beer Mania as satisfying fuel for a hike or a relaxed evening." - Stacey Leasca
