The minimal, slightly industrial space with the glass roof doesn’t adhere to a single cuisine, so every dish that lands on your table is full of remarkable surprises. The finger-long house sausage looks tiny, and tastes so big. The just-picked butterhead lettuce is the powerhouse lead actor to its supporting character cast of onion dressing, sesame emulsion, silken tofu, courgette, and salmon sashimi, because it needs very little work to shine.
