Unlike the pork bone-based broths mostly served in the US, Kagura-ya’s ramen is all about chicken and the golden schmaltz that gives a deep savoriness to everything it touches. At Kagura-ya, there are five main bowls to choose from the ticketed ramen machine, but the assari toridobe and noujuku toridoba are our favorites. Assari has a clear, salted chicken broth with pools of shimmering gold from the schmaltz that floats on top.
