Their signature ceviche Runas features fish and mixed seafood in a perfectly-balanced leche de tigre. That would be enough to make it solid cevichito, but Runas infuses it with smoked aji and then torches the dish so you get this whole fire and ice thing that would be gimmicky if it didn’t actually deliver a lot of flavor.
