"Palm Grill is one of the few restaurants in Manila that serves food from the southern part of Mindanao, specifically the ZamBaSulTa (Zamboanga, Basilan, Sulu, and Tawi-Tawi) area—and they represent the region well with chef-ed up takes on home cooking. Standouts include the pianggang manok, or a curry-like braised chicken dish that has a slightly sweet, nutty flavor. Another is the tender tiyula itum, a beef stew similar to bulalo made rich and buttery by torched bone marrow. Both dishes get their dark color and smoky taste from burnt coconut meat.
