His cooking is centred around two tasting menus, one which changes daily, the other seasonal, and features dishes such as Balfegó tuna marinated with avocado, quinoa and tiger’s milk; Carabinero prawns with Datterino tomato and jalapeño; and Miéral pigeon, banana and coconut.
