"Fredericksburg food truck Prometheus Pizza is opening a new restaurant in the same Hill Country city next year. The new physical Prometheus Pizza will be found at 108 South Lincoln Street, Suite 300 in Frederickburg’s downtown area starting sometime in the spring of 2024. Prometheus’s food truck — currently parked at 1180 US 87 South — is run by co-owners, co-founders, and couple Christopher Stephens and Rachel Collins Stephens. They serve up red and white wood-fired Neapolitan-New York-style pizza, made using flour from Barton Springs Mill. There are fun pies with punny names like the Breakfast of Champions, topped with boar chorizo, potatoes, and cured egg yolks; the Hestia Goes to Hawaii with pineapple, pancetta, and pickled jalapenos; and the CALL: 1-800-420-SHRM with shiitake mushrooms, a dehydrated mushroom dust, and pecan-pesto cream. Then there are salads like a Caesar, snacks like marinated olives, and desserts like brownies, peanut butter and jelly cookies, and lemon buckwheat tarts. The forthcoming physical restaurant will expand its menu sandwiches (with hot and cold options), house-made pastas, and other entrees. It’ll be open for breakfast service with coffee and pastries from 7 a.m. to 11 a.m., and then go into lunch and dinner services from 11 a.m. to 10 p.m., all daily." - Nadia Chaudhury
