"Opening this fall at 12500 SW Broadway Street in Beaverton, Don’s Favorite Foods will offer a prix fixe menu built around the Italian-American dishes chef Don Salamone grew up with. Meals will begin with small courses like oysters casino, uni toast, and steak tartare, move to a terrine-style slice of his mother’s eggplant Parmesan, then house-extruded pastas (bucatini, spaghettis, rigatoni) with a commitment to serving spaghetti with clams regularly; dramatic mains such as roasted veal shoulder with preserved peppers or ossobuco will follow, with a lemon-ice palate cleanser and the family cassata — a yellow sponge soaked with rum layered with cannoli cream, chocolate pastry cream, and standard pastry cream — as the finale.
