"The minimalist decor at Takumi says everything: The sushi bar’s countertops are empty save for a sharkskin grater, some earthen ceramics, and a set of knives so shiny and lethal they could double as samurai swords. Chef Eima Yamada worked for the Ritz-Carlton, Kapalua and Morimoto’s before helping launch this intimate spot in the Fairway Shops. You can order sushi a la carte or to-go items throughout the week, but the real magic happens on the weekend, when Yamada hosts omakase dinners for a dozen lucky diners. The two-hour experience includes as many as 17 individual dishes — a steal for $160 — including items likeakamutsu (blackthroat seaperch) flown in from Tokyo’s esteemed Toyosu Fish Market.
