"La Chalá’s motto is “Crazy Chicken, Happy Kitchen.” And joyful and relaxed is exactly how this next-level tapas experience feels. The menu spotlights less-commonly-used-in-Spain spices like cumin and turmeric, and unexpected flavor combinations. Every plate has an unexpected twist, like the star serranito roll filled with roast pork, ham, peppers, and cheese. Instead of the usual presentation in sandwich form, they ditch the bread, wrap it in a tortilla, fry it, and add a savory sauce on top of the warm, gooey goodness. But the pastela de pollo with a sweet, nutty sauce of almonds and syrupy sugar is a close second.
